PLANTAIN FLOUR RECIPES

Plantains – quite like bananas, so it’s a fruit. Also, not quite like bananas, so it’s a vegetable. You’ll be hard pressed to find a crop that keeps giving as plantains whether green, just ripe or super ripe. To say it’s a favourite across most parts of Africa is really mildly putting it. We are besotted by plantains because what’s not to love about this fruit-vegetable that can be eaten in a variety of ways – as crunchy chips, fries, mash … and now, green plantain flour for some of the best tasting gluten-free sweet or savoury dishes you can imagine.
